Apple & Raspberry Crumble
Did you know cooked apples, just like bone broth, are great for your gut health? This is because they contain fibre, pectin and flavonoids.
When you cook apples it boosts their gut-loving properties. Not only does it make them easier to digest, but it also releases extra pectin - a soluble fibre and powerful prebiotic.
This means that cooked apples are great for feeding and promoting the growth of good bacteria. Additionally, pectin has also been shown to reduce inflammation and help heal the protective lining along the digestive tract.
Simply mix, layer and bake all the ingredients together and you have yourself an extra delicious way to support a happy and healthy gut!
Ingredients:
- 1.5 cups almond flour
- 1/4 cup coconut oil
- 2 tsp maple syrup
- 1/2 tsp baking soda
- 1 egg
- 3 diced red apples
- 1 cup raspberries
- 3 tsps cinnamon
- 1/2 tsp coconut sugar
- Pinch of coconut sugar (for the crumble)
Method:
- Preheat oven to 180°C
- In a mixing bowl, combine the diced red apples with the cinnamon and coconut sugar. Mix until covered. Cook the apples on medium heat (no oil) so that the apples start to break down and become soft. Pour the cooked apples into a small baking dish as your bottom layer.
- Lightly clean your pan and then cook your raspberries the same as your apples so that they begin to soften. Layer on top of the apples in the baking dish.
- In a mixing bowl combine the almond flour, maple syrup, coconut oil, baking powder, and a pinch of coconut sugar and sea salt. Combine until the mixture becomes a dough-like consistency, then crumble into the baking dish.
- Add to the oven and bake for 30-35 minutes.
